Chocolate Cupcake with Cookie Dough Buttercream Frosting

These delicious cupcakes have a chocolate cake base with cookie dough inspired buttercream frosting!
Basic girls love Pinterest and cookie dough. We munch on our giant mixing bowl full of cookie dough while we sit on the couch in our yoga pants and scroll the through 30+ billion (seriously, I looked up the number) pins and create our fantasy boards for weddings, dream homes, and workout outfits we’ll never actually wear while working out. I’m not making fun of anyone… I’m simply describing myself, and I know I can’t be the only one.
However, I have to give Pinterest some props because without it, I wouldn’t have found many of the recipes that have inspired me. I recently tried these chocolate cookie dough cupcakes, and they turned out really well! These definitely will be a repeat creation – check out the recipe below!

Chocolate Cupcakes:

1 box Devil’s Food Cake mix
3 eggs
1/2 C. melted butter
1 C. milk
1/2 C. sour cream
2 tsp. vanilla extract

Cookie Dough Buttercream Frosting:

1 1/2 C. butter, softened
2 tsp. vanilla extract
1/3 C. flour
1/4 C. brown sugar
1 pinch salt (more if needed)
2-3 Tbsp. milk
2-3 C. powdered sugar
Mini Chocolate Chips for topping
Preheat oven to 350. In a large bowl, combine eggs, melted butter, milk, sour cream and vanilla extract until smooth. Stir in dry cake mix. Fill cupcake liners about 3/4 full and bake for 15-20 minutes or until an inserted knife comes out clean – let cupcakes cool.

Cookie Dough Buttercream Frosting:

Beat butter. Add vanilla extract, flour, brown sugar and salt to butter and beat again. Slowly add in milk and powdered sugar until you reach your desired consistency. You may need to add more powdered sugar or milk to get the right texture and consistency. You want your frosting to be creamy, but hold up well and not lose form. Slowly lift your beaters out of the frosting while still spinning – if they create a small spiral that doesn’t sink back down, your frosting should be the right consistency. Decorate cooled cupcakes with buttercream frosting, sprinkle with mini chocolate chips, and enjoy!
