Chocolate Cherry Cola Cupcakes

Growing up, I don’t remember a time when there wasn’t a 24-pack of Diet Coke in our fridge. I don’t like to say my mother was addicted, but she was known to drink 2 in one day on occasion. She also collected old Coca-Cola crates and antiques.


When I finished college, I found a cherry red vintage 50’s kitchen diner table and fell in love. Since then, I began collecting red appliances and my mom passed on her old Coca-Cola antiques to me.


I decided it was time to whip up a cupcake recipe that would show off Coca-Cola items and all my red kitchen appliances and dishes. These Chocolate cherry cola cupcakes seemed like something that came right out of a 50’s diner.


Chocolate Cherry Cola Cupcakes

1 box Duncan Hine’s Devils Food Cake Mix
3 eggs
1/2 cup oil
1 cup Coke or Diet Coke
⅓ cup Maraschino cherry juice
24 Maraschino cherries

1 cup (2 sticks) salted butter, softened
1 bag powdered sugar
1/4 cup Maraschino cherry juice
Red Food Coloring
24 Maraschino cherries

Preheat oven to 350 and line muffin pan with liners. Make batter according to box directions, substituting 1 cup of Coke and ⅓ cup cherry liquid for the water. Fill your liners 1/2 way full and add 1 cherry to the middle of each. Bake according to box directions and allow to cool completely.

For frosting: Whip softened butter and cherry liquid, then gradually add powdered sugar. You can add red food coloring for a richer pink/red color. Transfer frosting to piping bag , frost each cupcake and top with another cherry. Enjoy!
